Beer Profile: Rhizome by Folly Brewpub

For those who don’t know, Folly Brewpub is a treasure for the craft beer lover seeking farmhouse ales and saisons in Toronto. Folly provides us with many different tastes and styles of farmhouse ales, all brewed at the back of the College Street brewpub.

A rhizome is a mass of roots. This relates to brewing by referring to the hops. Hops aren’t grown from seeds but rather a rhizome, or collection of roots, that propagate each year.

Today’s entry is Rhizome, an American Farmhouse Ale. The Rhizome series features different hops in each rendition and the hops in this entry are Aramis and Triskel. The staff at the bottle shop indicated these hops were from the Niagara region in Southern Ontario.

The beer is a deep golden colour with medium carbonation and a white frothy top. The aroma doesn’t give too much away, just a general hop goodness. The flavour is predominantly tart and sour. I taste some lemon in there. There is a dry and crisp finish.
